In school catering, this is particularly important as it involves protecting a vulnerable group\u2014children\u2014where even minor deviations from hygiene or temperature standards can cause health issues. HACCP is not a one-time document but a living system that requires organization, training, regular monitoring, and verification.<\/p>\n<p>The fundamental idea of HACCP is to prevent problems with a proactive approach. First, we analyze hazards (biological, chemical, physical), then determine critical control points where risks can be effectively managed. For each point, we set measurable critical limits, establish monitoring procedures, anticipate corrective actions in case of deviations, and establish verification and documentation that prove the system is working.<\/p>\n<p>In practice, in school kitchens, it starts with the <em>receipt of foodstuffs<\/em>: the delivery note is checked, the temperature upon delivery, the integrity of the packaging, and the use-by date. It continues with <em>storage<\/em>, where the key is proper distribution and separation of raw materials (e.g., raw meat separated from ready meals), appropriate temperatures of refrigerators and freezers, and the FIFO system (first in, first out). The next step is <em>thermal processing<\/em>, where minimum core temperatures must be reached to destroy pathogenic organisms. This is followed by <em>cooling<\/em> and <em>serving<\/em>, where time and temperature are monitored to prevent the growth of microorganisms.<\/p>\n<p>Legally, the introduction and maintenance of HACCP in the EU are required by food hygiene regulations. In Slovenia, the operator of the facility is responsible for implementing it, ensuring staff training, internal control, and traceability of documentation. Inspection bodies check whether the procedures are sensibly designed and implemented in practice. Well-maintained documentation proves that the system is working: measurement records, checklists, laboratory analysis results, recorded corrective actions, and archiving.<\/p>\n<p>The advantages for schools are numerous. Firstly, the system reduces the likelihood of food poisoning and infections. Secondly, it brings greater transparency in kitchen work and individual responsibilities. Thirdly, it allows for better planning of procurement, storage, and preparation, reducing waste and costs. Fourthly, it strengthens the trust of parents and the community in the quality of school food. It is important that the system is tailored to the size and complexity of the kitchen: from smaller schools, where there may be one meal line per day, to larger central kitchens with multiple menus and diets.<\/p>\n<p>Effective HACCP in schools also includes <em>staff training<\/em>. Employees must understand why a certain temperature is important, how to properly perform disinfection, or why separate handling of raw and ready-to-eat food is crucial. Practice shows that simple tools\u2014transparent checklists, clearly marked thermometers, easy forms, and regular short reviews\u2014are the most effective. Digital support (e.g., forms and log generators) significantly facilitates consistency and archiving.<\/p>\n<p>Finally, it is worth emphasizing: HACCP is not intended for bureaucracy but for the safety of children. If systems are designed practically, regularly used, and results lead to improvements, then HACCP is not just about meeting legal obligations but a genuine quality mechanism.
